Job Description
Plans, coordinates, and directs the operation of a food service department in a state correctional facility, including planning and coordinating the preparation, cooking, and serving of food, and requisitioning food, supplies, and equipment.

Requirements

  • Associate degree in culinary arts, food management, or a similar field
  • Three years of experience in a supervisory capacity or supervising inmates in a commercial or institutional food service environment
  • Knowledge of food service organization and operation, food preparation and modified diets, safety hazards and precautions, proper sanitation methods, food storage methods, menu planning and recipe interpretation, standard cooking weights and measures, and principles of training, managerial principles and practices, and principles and practices of large-scale food service management
