PM Shift - Culinary Supervisor - Water's Table

Requirements

• 5-7 years culinary experience
• 1-2 years experience as a supervisor or lead role
• Excellent written and verbal communication skills
• Flexibility to work evenings, weekends and holidays
• Ability to work in a team environment
• High level of attention to detail, time management and organizational skills
• Exceptional leadership skills
• Ability to remain calm and collective during stressful situation
• Computer proficiency in ordering products and interact with sales and vendors
• Strong commitment to delivering high levels of customer service
• Ability to stand for long periods of time and walk moderate distances
• Physical stamina to lift 50# or more
• Monitor food cost, portion control, and waste to support fanatical goals
• Extensive experience in a fine dining kitchen, including leadership roles
• Passion for culinary excellence and innovation
• Creative problem-solving abilities to address challenges in a fast paced environment
• Strong understanding of advanced cooking techniques and fine dining plating standards
• Ability to cook meat to requested temperature from rare to well done
• Ability to filet fish and advanced butchery skills
• Knowledgeable of how to create all mother sauces, stocks and their direct derivatives
• Advanced knife skills
• Ability to operate all kitchen equipment efficiently and safely
