  • Prepare sushi menu items according to established recipes and presentation standards
  • Ensure freshness and quality of all sushi ingredients
  • Maintain proper storage and handling of raw fish and other perishables
  • Maintain sushi station cleanliness and organization
  • Follow portion control guidelines and minimize waste
  • Conduct regular inventory checks and communicate shortages to the Assistant Kitchen Manager
  • Maintain a clean and sanitary work environment in compliance with health and safety regulations
  • Collaborate with kitchen and front-of-house staff to ensure timely and accurate order fulfillment
  • Assist in training new sushi staff members
  • Stay current with sushi trends and techniques to enhance menu offerings
